I have a question regarding the Talairach and MNI templates. What are the advantages of using the Talairach template over the MNI template? Additionally, how does using these two different templates affect the results of data processing?

In general, choose a template that has a useful atlas and one that is appropriate for your population. Note that both MNI and Talairach spaces refer to a wide variety of templates, so it's important to refer to the specific template instead. The MNI space is more widely used nowadays. It's a little larger than the typical brain, but many atlases are now available for specified MNI templates.
