it defaults to COPY_name_of_the_source file
is there a way to select a specific name? (other than, of course, exiting afni and renaming both HEAD and BRIK in OS/terminal)

There is a SaveAs button, with which you can name the result. Once that is done, all edits are made to the new dataset.
But indeed, the COPY_ dataset is created immediately, which means having to delete it.

Ah, SaveAs... obviously. That was pretty stupid of me. Thank you!
Easy to miss when you're looking at so many things.
And just so you know this "trick" - 3drename can rename your dataset or 3dcopy to copy your dataset to a new one.
Thank for reminding me of 3drename!
But this time I am setting ROI drawing for a collaborator who is not familiar with afni, and I am trying to make it as straightforward as possible. Using any 3dprograms probably won't count as straightforward for them. I think we'll go with SaveAs and later deleting COPY's
